Chef John Colón Born and raised on the Upper West Side of New York City, Chef John Colón developed an early appreciation for art, design, and hospitality. While initially pursuing a career in entertainment, his path took an unexpected turn when he joined the team at the Four Seasons Hotel in Beverly Hills. It was there, within the world of five-star, five-diamond hospitality, that he discovered his true passion—the art of fine dining and impeccable service. The precision, discipline, and creativity of the culinary industry captivated him, setting the foundation for what would become a distinguished career. With a keen eye for concept development and a deep understanding of guest experience, Chef Colón became an integral part of some of the most renowned hospitality brands. He played a pivotal role in launching Ian Schrager’s Hudson Hotel, as well as the Morgan and Royalton Hotels, which pioneered the boutique hotel movement. These experiences refined his ability to blend culinary innovation with world-class service, positioning him as a forward-[email protected]hinking force in the industry. In 2015, a visit to Naples, Florida, sparked a new vision. Recognizing a lack of authentic Spanish and high-end Latin cuisine in the region, Chef Colón saw an opportunity to introduce Southwest Florida to the bold, sophisticated flavors of his heritage. A first-generation Puerto Rican-American, he was raised on the soulful dishes of the Caribbean and the refined techniques of Spain. His mission was clear—to showcase the depth and diversity of Spanish and Latin cuisine with both authenticity and a modern sensibility. In 2020, Chef Colón launched Bodega Ole in the Naples Design District, where he quickly built a devoted following for his dedication to Spanish culinary traditions. Building on that success, he opened El Basque in Bonita Springs in 2022, offering an intimate, ingredient-driven dining experience inspired by the Basque region, earning high praise from both guests and critics. Chef Colón is partnering with entrepreneur Diane Sullivan to reintroduce the bodega concept to the Naples Bayshore area. Together, they will unveil Bayshore Bodega – Coffee, Wine & Tapas Bar, an immersive culinary experience that blends rich Spanish, Latin fusion flavors with modern hospitality. Set to become a cornerstone of the Bayshore District, the concept will celebrate tradition while embracing the energy and vibrancy of the community. With decades of experience, a passion for innovation, and an unwavering commitment to culinary excellence, Chef John Colón continues to redefine Latin cuisine, bringing authenticity, sophistication, and storytelling to every plate
